Adam Hall has returned to Flying Fish for the third time, with the chef taking on the top position at the restaurant located in The Star Sydney. Hall has circled back to where his high-end culinary career began, rejoining the restaurant after recently working as a sous chef at Tristan Rosier’s Arthur in Surry Hills. “Flying Fish has been a mainstay in my career – it was the first fine dining restaurant I worked at when I moved to Sydney 11 years ago,” says the chef.

UK: Husband and wife Andy Miles and Serena von der Heyde have purchased the Rothay Garth Hotel in Ambleside for £1.175 million. Miles, the owner of Your Place, will take over the property from Simon Clark who has owned the hotel since 2019. Clark refurbished the site and will now retire from the industry. The hotel currently trades as a 15-room bed and breakfast with owners’ accommodation, tennis courts, bowling green, and gardens.

Penfolds Magill Estate Restaurant Sous Chef Robin Wagner has been announced as the winner of this year’s S.Pellegrino Asia-Pacific Young Chef regional final. The chef took home the title in a competition held on 17 October at the Sydney Seafood School where he went head to head with nine other finalists. Nearly 60 percent of restaurants in the U.S. have reduced their operating hours since 2019, according to a survey by Dataessential.
