Rockefeller, opened the Stone Barns Center for Food & Agriculture with his daughter Peggy Dulany in 2004, the nonprofit’s mission was to “ demonstrate, teach, and promote sustainable, community-based food production.” Blue Hill is now “sixty percent restaurant,” with what he says is a far less punishing schedule for its employees.
